Rhubarb Kumquat Compote


Roasting vegetables or fruit always results in intense flavors, so when I ran across this rhubarb compote recipe in David Tanis's
Platter of Figs, I knew I found a winner. The kumquats add a lovely orange punch to the rhubarb and I love the many ways to serve this dish: as a side like applesauce, with c
rème fraîche or vanilla ice cream for dessert, or layered to make a trifle.
Can anything be simpler?


Rhubarb Kumquat Compote
From Platter of Figs by David Tanis


Ingredients:

2 pounds rhubarb
12 kumquats, sliced
1 cup sugar

Method:
Preheat oven to 350.
Trim  and destring the rhubarb and cut into 2 inch pieces.  Add the sliced kumquats, toss them with the sugar and place everything in a shallow baking dish. 


Bake for about 45 minutes until the rhubarb is soft. Let cool and serve at room temperature.

  5. I love rhubarb and often add citrus when I'm cooking it. I haven't tried it with cumquats but that is definitely something I should do because your dish with all the chopped up fruit looks fabulous xx

  7. You know, I love kumquats and don't use them nearly enough. One of my favorites is tossing them in a touch of honey and roasting them on the top of oiled asparagus then hitting them with lemon before serving... so good together. There is something about the bitterness that I love.
    You have another winner with the rhubarb combo... but the rhubarb I got yesterday already has been purposed to make your rhubarb ice cream!!!

  8. Beautiful colors Barbara. A friend and I were talking about Rhubarb the other day. My mom must not have liked it, because being the big pie maker she was, I don't ever remember having it at all when I was growing up. On the other hand, my friend had rhubarb everything. I've got the platter of figs cookbook, might have to try this ... and I'll take mine with vanilla ice cream.

  12. I love recipes such as these when you allow the ingredients to take center stage. With rhubarb and citrus in season right now this is a must make recipe. I'm imagining how well this compote would go with an olive oil cake.

  18. This post is timed perfectly, Barbara. I noticed fresh rhubarb in the market yesterday and a big basket of kumquats not too far away. Years ago I tried to candy them but the result was a disaster. I'm completely intrigued by this fruity combo and can't wait to try it. I can almost taste that little scoop of vanilla ice cream on top.

  23. Barbara this brought back memories I had forgotten. My parents always had a fruit compote going, sometimes with a bit of liqueur.

    We used it for a myriad of dishes!I must make this!

  25. I must admit that I have never cooked a kumquat---and the idea of pairing it with rhubarb makes it all the more intriguing. I think I'd love it layered in a trifle.
