Childhood Memories: Mother's Lemon Sunshine


Do you have sweet memories of childhood desserts? I don't know what made me think of this one the other day, but perhaps it would be fun to make an occasional blog presentation of our favorite desserts from childhood. Making this one was a trip down memory lane. I don't think I even made this for my kids!  I saved all my mother's recipes in my files and between my mother and grandmother, we had some awesome treats as children. The British and French often refer to them as nursery desserts. 
Lemon Sunshine was frequently on the menu, as we all loved it.  Easy to make, sweet, airy and lemony in your mouth.  I used a Meyer lemon here because I had one left over. I also cut back on the sugar. The recipe calls for a cup total, but I used 2/3 of a cup total. Taste as you go, both the lemon mixture and the egg white mixture and sweeten as you wish.

Mother's Lemon Sunshine



Ingredients:
3 eggs, separated
1/2 cup sugar
1 lemon, grated and juiced
1 teaspoon gelatin
1/4 cup cold water
1/2 cup sugar

Method:

Soften the gelatin in 1/4 cup cold water.
Beat yolks in a small saucepan and add 1/2 cup sugar, lemon rind and juice. Whisking constantly, cook until slightly thickened. Whisk in the softened gelatin and stir until melted and thickened. Cool the mixture somewhat in an ice bath.
Beat the egg whites, beat in sugar until the whites are thick and shiny. Fold in the cooled lemon mixture. Chill. Makes about 6 custard size cups.

  5. Whatever brings on a sweet memory..I say..Go for it..

    My mom had favorite scents.. : L'Air Du Temps,Muguet Des Bois..etc..
    I ran out of my ..very reasonably priced Lily Of The Valley last year and watching my LOTV about to bloom..I went in search of..just to simply smell like her..
    I may branch out:)
    I told the lovely cosmetician..that's all I wanted to smell like her.♥

  7. What a great idea, Barbara, to share desserts from our childhood. This sounds so wonderful to me now but I'm not sure I would have eaten a lemon dessert when I was little! Thank goodness for older taste buds :)

  8. What a sweet idea - your childhood desserts to share. The Knight doesn't do lemon, or I'd go whip some up now. I wasn't allowed sweets as a child, so ... Fresh berries and whipped cream (no sugar, naturally)?

  9. My own mom was not much of a dessert person, but I do remember she mastered cherry pie and she could make a mean strudel dough. I have never even made strudel dough, but there was no such thing as prepackaged filo back then.

  11. What a light lemony dessert. My Mom was more into pies. Her apple pie was awesome. But I would love to try this. It is rather sophisticated I think.

  13. My childhood recipe has to be every time we had really ripe strawberries my mom would make "jordbær med fløde", which was basically like she made a watery strawberry jam, and we would eat it with evaporated milk (or, if we didn't have that, we would eat it with milk)
    This looks so good!

  16. Isn't it amazing how our childhood memories are so inevitably connected with food? I think about it very often. I love lemony desserts and this one is light airy and perfect for summer!
