Roast Beef Hash, Ornaments and a Christmas Meme!


I've been making this rather unusual hash for years. Any time we have leftover steak or roast beef, my family loves this dish. Simple to put together, comforting and you can use that tender beef in a casserole instead of sandwiches, or when everyone gets tired of sandwiches. We love the red wine in it and while it bakes, it gets a little crunchy on top. Give it a good stir and all that lovely gravy in the bottom will coat everything.

Haven't a clue where this recipe came from....could have been a friend or even in a magazine back in the 70's. If anyone knows, let me know. I wish I had been more thorough when I entered this kind of recipe in my MasterCook program years ago.

Roast Beef Hash




Ingredients:
4 cups diced roast beef
1/2 cup red wine
4 cups diced, cooked potatoes
4 tablespoons butter
4 Tablespoons chopped onions
1 clove garlic
1/2 cup heavy cream
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1/4 teaspoon savory
2 Tablespoons chopped fresh parsley
2 Tablespoons soy sauce
Paprika

Method:

Mix onion and garlic with herbs and saute in butter.  Add potatoes and brown slighty. Add all other ingredients and pour into casserole. Bake 350 for 30 minutes.

  2. This hash looks really good Barbara. I'd love to try it. I love those tropical fish ornaments. I think I remember you posting a photo of some like that last year. I've never heard the Dolly/Rod version but like the Natalie Cole/James Taylor version that I've added to my Christmas CD. Great song.

  4. I have so many recipes like this. When I used to commute between the city and the country, I made this black book of recipes so I would have them in both places. It is stuffed with wonderful recipes but most of them have no attribution. Who knew I would need it one day. I feel terrible if I am using a famous one or a favorite family recipe unknowingly, but all I can do is say I don't know. The book is now 20-odd years old... I don't even recognize some of the clippings! That said, great recipe and love those ornaments... bet you have a lovely house for the holidays!

  10. This sounds delicious. Recently I was visiting Denver and had the hash for breakfast at the hotel. It was amazing. I don't think I'd ever had hash freshly prepared. Great ornaments!

  26. Funny but I was just looking through my recipe binder that I used back in the day when I still hand-jotted notes!! And it makes me feel OLD!!! I am such a fan of these kinds of dishes - ones that use up leftovers so that nothing goes to waste (but DO go to MY WAIST!) And your collection of ornaments is lovely!

  38. What a fun post! First, I love the recipe... there is nothing like a good hash recipe, is there. Yours is now tucked away for me to try. Secondly, the ornaments are adorable. Some from my grandmother are my most precious keepsakes. And last - the questions and answer "games" are a hoot!

    My family and I love to make homemade roast beef hash, but I've never made it with wine and/or cream. This recipe will definitely be on my radar the next time I have leftover roast beef.
