Faith's Vegetable Fritters


Even after all these years, I'm still amazed at the amount of time we spend planning and organizing for the holidays when it seems to be over in  a flash.  Children open everything so quickly, even when you try to slow them down. Mine are now adults, so we take turns opening, but you just can't do that when they're younger.  As it was, we barely got them through brunch, they were in such a rush to get back to playing. Food? No time for food.

But then I've always loved the planning part....the organizing, the decorating, the cooking, finding surprises for everyone. No doubt there were times when my kids were really little that the mass confusion pre-Christmas wasn't quite so much fun, but I always remember enjoying the preparations.

We had adults only chez moi this year; my Michigan kids decided to stay north as it's my granddaughter's first year in college and she wanted to be home to see her old high school friends. This was also, at 4 years old,  my grandson's first year to understand what Christmas is all about. I was sorry to miss that. But they have their own traditions to make.

My NY daughter was here, so this year we kicked back and took our time enjoying every minute. Not always easy....my Florida son works nights in the ER, so he comes right from work for our gift-opening and brunch, and he's exhausted. Then he goes home, sleeps and comes back around 6 for dinner. Not always the case. He's always here for Santa, but if he has to work that night, he misses Christmas dinner. L
uckily, this year he got Christmas Day off. I am so grateful to all our emergency services people who are working holidays, while we enjoy ourselves. The ER, no matter the day or time, must deal with patients who are hurting, panicked and worried. I am in awe of people like my son David and so proud of him. 

Fortunately, this year, we were able to reward him with our traditional Christmas brunch, our love for him (and each other) always there in the background and then, later that evening, a lovely dinner....together.


Now that the wrappings are all stowed away, we are perusing our new books, trying to figure out various electronics, admiring new clothes and polishing off leftovers, I often feel the need for quick and light dinners the week following Christmas. Company is still here and we do have to eat, after all. Faith from An Edible Mosaic came up with the perfect answer. It seems like a summer dish, but you can adapt the recipe no matter where you live. I increased the corn (use frozen corn if you need to) and use any veggies you want, but it was perfect just the way Faith made it.

Vegetable Fritters
Ever so slightly adapted from An Edible Mosaic




 
Ingredients:
1 medium zucchini, diced small (about 2 c diced)
2-3 ears cooked corn, cut of the cob (about 1 cup corn or more and you can use frozen)
3 spring onions (white and green parts), thinly sliced (reserve 2 TB of the thinly sliced green parts)
1/4 cup all-purpose flour
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
2 large eggs, beaten
1/2 cup sour cream (or use low-fat)
1/4 cup plain yogurt ( I use Fage, and low-fat if you prefer)
1/4 tsp seasoning salt
Canola oil ( I used a tiny bit of butter and olive oil)


Method:
Preheat the oven to 200F.
In a small bowl, toss together the zucchini, corn, spring onions, flour, 1/2 tsp salt, and 1/4 tsp pepper. Stir in the beaten eggs just until combined.
Pour enough oil into a large skillet to generously coat the bottom. Heat the skillet over medium to medium-high heat, then drop the vegetable batter by the rounded tablespoonful into the hot oil and cook until golden brown on both sides, flipping once (about 5 minutes per side). Turn the heat down if the fritters start to brown too quickly.
Once the fritters are cooked, transfer them to a paper towel-lined plate to drain any excess oil, then transfer them to a baking sheet and keep them in warm the oven until all the fritters are made. Repeat this process until all the batter is gone.
In a small bowl, combine the sour cream, yogurt, seasoned salt, and 1 TB sliced spring onion greens.
Serve the fritters garnished with the sour cream mixture and the remaining 1 TB of sliced spring onion greens.
Serves 4 as a side dish or 2 as a main.

  3. Barbara those fritters look wonderful. Sounds like you had a great Christmas. I like all the organizing too. I keep all my lists handy and it seems like all goes pretty smoothly. Hopefully you'll receive lots of photos from the family members that weren't able to make it.

  4. Wow these look really good I will be giving them a try soon. I am happy that some of your family got to spend time there (though given the choice of Michigan and Florida...). But you are right I am sure he has traditions to make.

    Our Christmas unwrapping took about 20 minutes of pure Joy!

    We have started opening our gifts on Christmas Eve, and that goes slowly, even with just the two of us. The fur-girls always have a special chew so they'll wander off and leave us to open gifts in peace...

    Now, at my sister's - Christmas night - it's another story. We don't have little anymore either. My nephew is 22, and even BIL's girlfriend's daughter is a VERY mature 12.

    And we have a white Christmas. It means postponing Christmas at the farm, but that's okay too.

  6. You do seem to find perfect matches for all occasions... I am a little stuffed with leftovers... a new veggi dish would be a welcome change.

    I must say, even with a room full of adults.. it is still pandemonium as the wrapping paper shreds fly... people are still children at Christmas!

  11. First off--a tip of the hat to David and those like him who are so important to our well-being all the time. Thanks!

    I have to agree that I find all of the pre-Christmas hunting, gathering and preparing the highlight for me. When the children were little, their excitement was wonderful. Now that they are older, it is a more relaxed time. This year, they spent Christmas on opposite coasts in their own homes. We missed them but had a nice time with dear friends.

    I am thinking this recipe will be a good change for us this coming week--maybe with an egg on top since I thought that's what you had done at first glance.

I was also amazed at how quickly it was all over but to be honest, the planning part is my favourite too. Christmas Eve is so lovely with everything still to come and I wish time could stand still a moment to savour it longer.

  24. You are right, there is a lot of planning and preparation that is dedicated to making one day special, and in a fell swoop, it's gone. It sounds like this Christmas was quite special, and all the work was worth it, if only to make your loved ones happy.

  29. BARBARA!!!! It was delightful to read you holiday experience! Oh, ours was as quiet as always since we have no children, and our families are scattered all over the U.S., with my parents being deceased. No siblings for me, but my husband's are in New Hampshire, Southern and Northern California and New Jersey! But we have made our own traditions and a fine turkey was enjoyed. Guess what we had for an apértif....CHOCOLATE WINE from the Netherlands! That was SO GOOD!

    Thank you Barbara for coming over; so many people seem to still be visiting away from home. I wish you much happiness in 2011 and also to see what you will be cooking up! Those fritters look fabulous! Anita

  30. I feel like the way you do too, Barbara. There is so much build up & festivity for just a day and a half of celebration really. I remember feeling so let down at this time as a child too.
    Anyway, these are wonderful! I'm totally making them. They remind me of the beet latkes I just made-so good. I've found I really like veggies mixed with eggs & such and then FRIED-yum (smile)...!

  39. It is bittersweet when things change. You are happy for your family to make new traditions for their families but sad things aren't quite the same. For the first time in over 20 years I did not have the family for Christmas dinner. My daughter and her husband had us all!

    I love zucchini fritters but never thought of adding corn. These sounds wonderful!

    Than you for sharing your thoughts with me today. It is really all about the family, isn't it? I savour this week, too. Our holiday starts with our dinner on Christmas eve and for me continues through the week as I reconnect with friends and family and relax and just take the time to enjoy the relationships of those we love. But, I am on holidays throughout the week, so I can do that. I love that.
    And, you give books, too! That is a tradition I have kept with my family since the children were born. I love to see them reading in the afternoons - still, now that they are grown. My family is much smaller than yours. Two daughters. My parents, both 80, are close by. My one sister is here, too... one of my daughters is an OT in Palo Alto, and I am so thankful that she would think of no where else to be (for now) and flies home every year. That will soon change, too, as I am catching a whiff of a marriage on the horizon. But, the season will always be one of love and time and preparations. (I am like you. I love the preparations and anticipation! - like, years ago - getting ready for a hot date... that was so much fun, too!)

  49. Sounds like you had a lovely Christmas with (most) of your family at home. It really is about family isn't it? No matter how large or small. My little ones are still at that bright-eyed excited stage and Christmas morning was a blur of wrapping paper and squeals of surprise. I love it :)
