Man-Pleasing Chicken


Well, I don't know about that title, but that's what it's called. It pleased me pretty well too. But when the recipe advises "line your dish with foil" please pay attention. What a mess I had...even soaking overnight didn't clean the pan and I finally resorted to an SOS pad, something I was amazed I even had in the house. Now that I've warned you, I've got to say this was both simple AND delicious. Such a snap to throw together and most of us have the 3 ingredients in the fridge or pantry. I'm going to show you a photo of the burned pan at the end...it's worth it's weight in gold re: reading and following instructions. (I noticed Witty in the City pulled the thighs from the pan and plated them for her photo. And I now know why. Crusted foil isn't very pretty either, but it's easier to clean up.)

Man Pleasing Chicken

Ingredients:
1/2 cup Dijon mustard
1/4 cup maple syrup
1 tablespoon rice wine vinegar
6 boneless, skinless chicken thighs

 Method:

Preheat oven to 450º
Line a baking pan with foil!
Mix the first three ingredients. Dry the thighs, salt and pepper them and add to the pan. Pour the sauce over them, turning so they're covered on both sides. Bake for 40 minutes or until thermometer reads 160. Baste once or twice.

Tip: I used the above sauce recipe for just 2 thighs and barely had enough to baste. I'd double the sauce ingredients if I was making 6.

  1. Thanks for the advice on the pan. I wish more people would share these kinds of things so save the next person from the mess. I used foil and heavy duty foil more and more. Who wants to clean up??

    My husband is crazy for thighs, so I'm trying to use them more. We love anything with Dijon.

  3. I was shocked to see it wasn't cheese! WIth all that burned stuff it looked like cheese, but then sugar can be equally as destructive. Looks nummy, one of those this must be good because it sure sounds weird dishes.
    I trust you when you say it's good. Sorry about the mess... Brillo pads are great when you need them (although I love stainless steel scrubbies for really tough bits, now I hear boiling with vinegar or something takes it all away easily. I need to find the tip again and try it.

  5. I find Pyrex..the worst to clean Burt foods off..
    A trick is to let soak overnight in a solution of good quality dishwasher detergent and hot water..
    Helps a lot..
    Hate to say this..but even a dollar store throwaway pan..sometimes there are 2..
    Not exactly eco friendly..but we do the turkeys in them now..

  7. I can see this being a woman pleaser too Barbara, if I were to use one of those foil pans from the dollar store. As someone said, not so eco friendly but if they can be washed I do, if they can't I toss!

    I haven't had any problems uploading photos but I do it directly through Picaso. I don't know if that would make a difference.

  12. Don't you just live easy recipes like this? My easy chicken recipe is 1 part Harissa to 1 part honey. Totally finger lickin'!!! Must buy a silpat Barbra daaahling, trust me. Saves so much time and energy. It's not just grat for cookies.

  18. I love chicken so this dish is right up my alley! Cleaning is a drawback but then again if this is the only way to enjoy this delicious meal, I am able to make the sacrifice!

  28. I really like the combination of maple and mustard---good idea to spark it with rice wine vinegar.
    and, thanks for the heads-up about the "burn baby burn." rarely do I line a baking dish with aluminum foil...but this time, it's a must!
