Two-Ingredient Pumpkin Cake with Apple Cider Glaze


To my sweet, understanding readers:
I'll still be posting for a while, but I just won't be visiting you as regularly as usual. I'm moving the middle of November (a local move) and it's going to be a stinker 'cause I've lived here 35 years! Just imagine the accumulation of "stuff" after all these years. So be patient with me. I'll try to visit everyone off and on.
A fun fall treat follows. Kind of a trick to it too. :)

This recipe always seems to make the rounds every autumn. Have you seen it? It's been in my file forever; I never made it because I couldn't get my mind around the idea of using a cake mix. But if you can't believe Cathy at Noble Pig, who can you believe? She posted it years ago. If you've never tried it, trust me (and Cathy). It's really amazing, fast and everyone will think you spent the afternoon making it. The trick? Two ingredients. The treat part? Wait 'til you taste it!

Oh....and you might want to make extra glaze. Everyone will want to pour a little more over their slice as they eat it. It absolutely makes the cake.
I made it in a springform pan, but Cathy made it in a 7 x 11 x 2 inch rectangular pan. Whatever you want. Just adjust your baking time.....mine took a tad longer to cook. Be sure the cake tester comes out clean, but don't overbake.


Two-Ingredient Pumpkin Cake with Apple Cider Glaze

Ingredients:
For the Cake:
1 Yellow Cake Mix (I used Duncan Hines)
1 15 ounce can of pumpkin puree

For the Glaze:
1-1/2 cups powdered sugar
3 tablespoons apple cider
3/4 teaspoon pumpkin pie spice

Method:
Empty the contents of the boxed cake mix and pumpkin puree into your mixing bowl. ( You can do this by hand, but it's easier with a mixer.) Mix well.  The batter will be thickish.

Pour into a greased  7" x 11" x 2" pan. 

Bake at 350 degrees for 28 minutes or until a toothpick inserted in the center comes out clean.  Do not overbake.

Let cool for 5-10 minutes in the pan, turn out onto your serving plate. Or cut into squares and serve that way.

Method for the glaze:
Combine powdered sugar, apple cider and pumpkin pie spice.  Glaze should be thick but pourable.  Add more sugar or cider if needed.  Pour over the cake while still warm.  Reserve some to pour over each slice when served.

Serve warm or room temperature.

  1. Can't wait to try it. I've been mixing pumpkin with whatever cake mix is in the pantry for years to make muffins. Sissy can eat them too as long as I don't use chocolate.

    Not a cake mix person but some recipes with mixes have been proven winners..bet this is one of them..
    Where did you buy your tart rings for the cookies..I have tart rings..but 4 and they look big...you know for the cookies:-) better ask you now:-) thank you..

  5. Oh my this looks lovely and that glaze so perfect for this cake. I just made a carrot cake today and just was not happy with the results...oh well the cream cheese icing was out of this world.

  6. I'm with Nana--I hope you'll tell us how you did it. I have had four major moves after marriage--from Virginia to California to Texas to South Carolina to here.
    Whew! The good thing is that all moving expenses were paid for us--even the packing. Our next move will be all on us. I don't know when it will be but I'd like to be prepared.

    This looks delicious and if you trust Cathy and I trust you, how good it must be.

  10. Sounds like something even a non-baker such as I could do.

    We've moved so many times I've lost count. One time we moved next door and didn't really pack. Worse move of our lives.

    But 35 years, wow. That's a lot of memories, never mind stuff, to go into boxes.

    In the meantime, this recipe looks great. I'm like you - I don't usually use cake mixes in my recipes - but I might make an exception for this one!

  13. Oh, Barbara--best of luck with the move. I've lived in my house 13 years, and we are considering a change. In anticipation, I've begun the laborious task of getting rid of stuff--starting in the dreaded basement.

    On a more upbeat note---you've got my attention with this 2 ingredient cake! the cider-based glaze is real inspiration.

  19. Oh my gosh, I can't even imagine the trouble I'd be in if I had to move right now. So much accumulation over the years with our daughters' things, moving my MIL and keeping some of her things too. It will be a great feeling when you're done, though, I'm sure.

    I can't believe it - only 2 ingredients! I have a favorite lemon cake that uses a cake mix too and I always buy Duncan Hines :) I'd love to try this too, Barbara, because I love pumpkin.

    I know how hard a move is...even in the same city or state.....it is alot of work!!!
    I bet you are excited about the new place. I understand Warm......we are headed to Florida this week...was hoping for cooler temps.....oh well..we will HAVE A blast I am sure!!!

    Well, in short, I am experiencing the pains of being an artist. IF I PLAY THIS RIGHT by watching our budget and exposing my art as best as I can without spending money we don't have, then MAYBE I will stick with it. But I am having to see what I need to improve so that I basically can sell. The realities of the dream are that you need to make a living!

I could never make pumpkin pies because it is not sold in cans neither in France nor in Argentina( I tried with the real one, but it turned out too acid) Until, the other day, I went into Le Bon Marché, and there they were !!!! waiting for me! pumpkin in cans! I bought many and I will start the pumpkin baking season...I'll bear your recipe in mind! Thanks!
